Preparation

Start by preheating your oven to 325°F (165°C). In a saucepan, heat the cream and vanilla bean over medium heat until it begins to simmer. Remove from heat and let it sit for about 15 minutes. In a separate bowl, whisk together the egg yolks and sugar until well blended.

Remove the vanilla bean from the cream and scrape out the seeds, adding them back into the cream. Gradually add the cream to the egg yolk mixture, stirring constantly. Tarte Tatin

The Tarte Tatin is a famous French upside-down tart, typically made with apples caramelized in butter and sugar before being baked with a top crust.

For this recipe, you’ll need:
– 6 large apples, peeled, cored, and quartered
– 1/2 cup unsalted butter
– 1 cup granulated sugar
– 1 puff pastry sheet

Preparation

Preheat your oven to 375°F (190°C). In a large, oven-safe skillet, melt the butter over medium heat. Sprinkle the sugar evenly over the butter and arrange the apple quarters on top. Cook for about 15 minutes, until the sugar has caramelized and the apples are slightly softened.

Place the puff pastry sheet over the apples, tucking in the edges around the apples. Bake in the preheated oven for about 25 minutes, or until the pastry is golden brown. Remove from the oven and let it cool for a few minutes. Carefully invert the tart onto a serving plate, so that the caramelized apples are on top.
